New Dining Champ in Jackson + Allie & the Wolfpack
Jackson Hole will be all over the headlines this week as Federal Reserve Chairman Jerome Powell takes the stage at the annual Jackson Hole Economic Policy Symposium. I’ll be making my rounds in search of shots of the world’s financial power players, and, if luck is on my side, slipping into a CNBC live shot.
If that happens, it won’t just be good for the ego… it will finally settle a five-year wager with my former business partner about who would make it onto CNBC first.

Teton Takes
1️⃣ We have a new #1 restaurant in Jackson!
A few Tattles back, I ranked my top 11 dinner spots in Jackson and teased that I’d soon be checking out the brand-new Steadfire Chophouse at the Four Seasons in Teton Village.
Well friends… we have a new champ in the valley. Steadfire absolutely crushed it.
As many of you know, I grew up on the East Coast and have slurped oysters from Maine down to Charleston. But nothing—and I mean nothing—matched the Washington State oysters at Steadfire. They were massive, slightly sweet, kissed with just enough brine. Truly unforgettable.
For my entrée, I went with a locally sourced 22 Wagyu steak, perfectly cooked and served with a side of bone marrow. An indulgence worth every bite.
The real shocker? My notoriously picky 16-year-old ordered the Snake River Farms pork belly to start, followed by a roasted Maine lobster tail. He gave both a 10/10—and trust me, he doesn’t hand those out easily.
My wife closed things out with the 16-oz bone-in bison. Her verdict? The best bison she’s ever had. Full stop.
One side dish you shouldn’t skip is the “Three Sisters”—a beautiful mix of pole beans, white beans, zucchini, corn, squash blossom, and a silky herb–pine nut butter. Easily one of the most flavorful add-ons of the night.
Service was spot-on (shoutout to Peter), and the drinks? Let’s just say they stayed topped off and landed exactly how I like them: impactful.

2️⃣ From Wolf Packs to Bison Funerals: The Wild World of Allie Roams
When it comes to capturing the wild heart of the Jackson Hole area, few do it quite like Allie Roams. Equal parts biologist and artist, Allie has spent countless dawn-to-dusk days chasing light, shadow, and the elusive residents of the Greater Yellowstone Ecosystem.
From wolves clashing over territory to the quiet heartbreak of a bison funeral, her lens doesn’t just freeze a moment; it tells a story. Allie recently shared with me the passion behind her work, the near-misses that still haunt her, and why she believes every photograph can spark a little more love and a little more protection for the wildlife of this incredible region.
📸 Stories from the Field
Can you share one wildlife encounter that’s still vivid in your mind?
The first time I saw a bison funeral. A cow bison stood over her dead calf as the herd approached. They circled slowly, each taking turns sniffing and licking the calf. It was a heartbreaking display of empathy and connection. I was so moved, I didn’t even think to raise my camera.
Do you have a favorite individual animal you’ve photographed?
Grizzly 610. Hands down.
Have you ever missed “the shot” and still think about it?
Yes, the day Grizzly 610 brought her three cubs to Cunningham Cabin. The Tetons were glowing in the background, and I knew it could have been an iconic shot. But there was no way to get into position without disturbing them. I still picture it in my head.
